Description
Crispy, spiced pumpkin seeds made with the bariatric seed trick (soak, dry, roast) for a crunchy, satisfying snack.
Ingredients
1 cup raw pumpkin seeds (pepitas)
1 tbsp olive oil or avocado oil
1/2 tsp ground turmeric
1/2 tsp ground ginger
1/4 tsp sea salt
Optional: pinch cumin or garlic powder
Instructions
Soak seeds in warm water for 10 minutes
Drain and pat completely dry
Toss seeds with oil, turmeric, ginger, salt, and optional spices
Spread in single layer on parchment-lined sheet
Roast at 325°F (160°C) for 18-22 minutes, stir halfway
Cool completely before storing
Notes
Store airtight up to 7 days. Great for lunches, salads, and yogurt bowls.
