Description

Quick, fluffy, and packed with protein—these pancakes take just 5 minutes and are perfect with your favorite jam or fresh fruit.


Ingredients

Scale

1 scoop vanilla protein powder

1/2 cup oat flour or blended oats

1 tsp baking powder

1/3 cup milk of choice

1 egg (or flax egg for vegan)

1/2 tsp vanilla extract

Pinch of salt

Dash of cinnamon

Optional: mini chocolate chips, berries, nut butter


Instructions

1. Whisk protein powder, oat flour, baking powder, cinnamon, and salt in a bowl.

2. Add egg, milk, and vanilla. Stir until just combined.

3. Heat a nonstick pan over medium. Grease lightly.

4. Scoop 1/4 cup batter per pancake onto pan.

5. Cook until bubbles form, about 2 minutes. Flip and cook 1-2 more minutes.

6. Serve warm with jam, nut butter, or fruit.

Notes

For extra fluffy pancakes, let the batter sit 1 minute before cooking.

Freeze extra pancakes in a zip-top bag and reheat in the toaster.
