Ingredients
4 cups chopped rhubarb (fresh or frozen)
1/2 cup sugar (or honey)
1/4 cup water
1 tablespoon lemon juice
1 teaspoon vanilla extract
Optional: pinch of cinnamon or ginger, orange zest, or 1/2 cup sliced strawberries
Instructions
1. Combine rhubarb, sugar, and water in a medium saucepan over medium heat.
2. Add lemon juice and any optional spices or fruits.
3. Simmer for 10–12 minutes, stirring occasionally, until rhubarb is soft and the sauce thickens.
4. Remove from heat and stir in vanilla extract. Taste and adjust sweetness.
5. Cool slightly before serving. Store leftovers in the fridge for up to 1 week.
Notes
For less tart sauce, use more sweetener or add a diced apple.
